This is a 1 day, 6 hour cheese making workshop, with a full lunch and cheese course, wine, afternoon-tea and snacks. Participants are required to bring an apron and three tupperware containers to take your cheese home in; all other equipment will be provided.

All participants leave with tasting notes and cheese making recipes. Should you not have received our newsletter with all the details, please sign up for next months updates and email us for more details.

For our next workshop on March 31st 2012 we have engaged local cheese making hero ‘Michael McNamara’ from Pecora Dairy Robertson, the Southern Highlands to co- present alongside us, to further enhance the experience.

This ‘meet the maker’ experience will provide cheese making enthusiasts with an industry contact moving forward with establishing their cheese making dreams!

Michael will look to guide the group through a Fetta and a Bloomy/mouldy camembert style of cheese recipe using REAL MILK!!! local, un homogenised cow’s milk, and will will knock up some ricotta with the left over whey.

Join McIntosh & Bowman as they bring farmhouse cheese making skills back to the forefront of people’s attention and ability. As all our experiences do, this course offered an excellent perspective on both the science and the art of cheesemaking.

Experiences will run for approx 6 hours and costs will include:

  • lunch from Room10Espresso Potts Point
  • tea/coffee (grinds from Mecca)
  • refreshments from Fratelli paradiso and
  • and a Simon Johnson cheese selection, wine and boutique beer
  • fresh milk from local NSW Dairy
  • tasting notes and cheese making recipes

Excellent day. Thoroughly enjoyed the experience. Claudia’s knowledge and explanation of cheese was fabulous. Claudia is very very knowledgeable and enthusiastic. It was so much fun and I’m truly inspired to do more.

Very enjoyable. Fantastic and motivational. Something quite unexpected and certainly a course that I would recommend to any age group.

- Jennie Downes

It was great. I learnt loads about cheesemaking and came home with so much, we don’t think we’ll be able to eat it all!
